Main Features: The production takes place with traditional technology: bronze drawing and slow drying at low temperatures. Bronze drawing gives the pasta a wrinkled and irregular appearance that allows greater penetration of cooking water and a better grip on sauces. Slow drying at low temperatures, up to 26 hours with temperatures below 50°C, allows the almost unchanged maintenance of the organoleptic and taste characteristics of starches and gluten, without causing a pre-cooking and “evaporation” of protein and nutritional components (unlike industrial technology that with very high temperatures, up to 110°C, and for a short time, a maximum of 2 hours produces a product uniform in color, of poor flavor and with a so-called “caramelized” surface, that is, that prevents good penetration of water.
