The peculiarities of our sauces and pâtés are the meats of first choice and the traditional recipes. Sauces, for example, are prepared with a cooking bottom of chopped fresh vegetables – onion, celery, carrot, etc…-. When the vegetables are well withered, meat is added to make the first cooking. The meats thus chopped finish cooking very slowly with the addition of wine, tomatoes from our garden and other ingredients. The long cooking times and the consistency of the sauce are the best guarantee for a strong but balanced flavor and an absolutely homely quality.
