Grapes: Sangiovese 80% – Merlot 20%
Harvest: strictly carried out by hand in boxes.
Vinification: mashing and vinification in tanks steel at controlled temperature (26-28 ° C). Maceration on the fermentation marcs for 20-22 days.
Aging: the Sangiovese ages for about 12 months in tanks of stainless steel, the Merlot ages in oak barriques for 12 months.
After the formation of the blend, the wine rests for a minimum of six months in the bottle.
Alcohol content: 13.50% vol.
Production area: Roccastrada (GR) Tuscany.
Nature of the soil: clayey limestone with good presence skeletal finish.
Training system: spurred cordon.
Number of plants: 5,682 vines per hectare.
Grape yield: 70 quintals per hectare.
Tasting sensations: wine of intense ruby red color, marked hints of fruit ripe red berry in harmony with vanilla aromas without that neither of them dominates the other. Secondary hints of licorice. Equipped with excellent structure combines the fruit and the freshness of Sangiovese with the softness of Merlot. Fine and velvety tannins.
Food pairings: first and second courses based on meat, suitable for game, cheeses and long-aged cured meats.
